Let me share a favorite recipe of mine!

Hello Family and Friends!

Yes I know, it's been way too long since a good update. But we've been busy. Our household just got over a flu bug that hit us all and took a good week to get rid of! But we are feeling much better! Tonight I'm making one of my favorite recipes in my crock pot. I'll share it here with you!

Chicken Tortilla Soup

4 uncooked boneless, skinless chicken breast halves
2 15oz-cans black beans, undrained
2 15oz cans low-sodium Mexican stewed tomatoes, or Rotel tomatoes
1 cup low-sodium salsa (mild, medium or hot, whichever you prefer)
4oz can chopped green chilies, undrained
14 1/2oz can of low-sodium tomato sauce
baked tortilla chips
Grated cheddar cheese

1. Combine all ingredients except chips and cheese in a large slow cooker.
2. Cover. Cook on low for 8 hours.
3. Just before serving, pull apart chicken using two forks.
4. To serve, put a handful of chips in each individual soup bowl. Ladle soups over chips and top with cheese.

It's a great book. Healthy cooking too. Although you don't have to use low sodium ect.

I also add sour cream, and chopped avocados. :) It's a great recipe that is healthy and very yummy!
